Let me go over some of the points you raised.

Who are ShiftCreate?
ShiftCreate is my freelance web development company – which is run entirely by me, Adam Jimenez.

Will ShiftEdit always be free?
Yes, ShiftEdit will always be free.
We do accept donations to cover costs – we may introduce a pro version down the line.

The beauty is the vice
There was an excellent point about the risks associated with editing files on the fly.
As you correctly stated the revision history is there to get you out of a hole if u need it.
In a mission critical app you should really be working off of a development server – and then having a mechanism to push your changes live; just like you said!

iPad support
Not having an iPad, I haven’t been able to test this. ShiftEdit appears to work fine in windows Safari 5.0.

Quick edits
Again you hit the nail on the head here. At present ShiftEdit is unlikely to be a complete replacement for your desktop IDE.
It is however ready to be a useful tool for quick edits and coding from another computer or device where you don’t have access to your other software.
Eventually it should have enough features to replace your desktop IDE completely.

Wordpad replacement
This was an interesting suggestion. One limitation of working in a browser is that you don’t have much access to the local file-system. So the user would have to keep uploading/ downloading every time they open or close a file. So you really need an account for persistent data.
To make ShiftEdit easier to access we now support OpenID login via google accounts.
